A burger is part of everyday food cuisine and culture both here in America and all around the world. Cooking a burger is easy. Cooking it well, on the other hand, is quite difficult, especially to make it memorable.

That is why I was absolutely blown away by the burger that fell into my hands on September 5, 2026. It was a casual weekend, a weekend where the City of Stephenville was throwing the “Western Swing Festival.”

On this particular day, I really wanted a cheeseburger. I went up to a food truck, like any other person, and ordered a cheeseburger. The next few moments were heaven. The burger was tender and juicy and it felt like home in a burger.

Little did I know, behind this burger, behind the food truck, was just a man passionate about his cooking.

Chance Martin and his wife Savannah Martin founded their “Seasoned & Blessed” food trailer after years of Chance cooking and giving food out for free, simply because he “just likes to cook.”

The Martin’s had known for a while that they had wanted to eventually get a food trailer; they were just waiting for the right circumstances.

These circumstances presented themself shortly after Savannah and Chance opened her boutique, Heritage 1823. With the exposure to more community events and other food trucks, Chance felt that he could do better for a more affordable price.

And suddenly Chance had a new job that would allow him the time to commit to the food truck.

Slowly, he and his wife began creating their full menu together. Chance described how a lot of the food is motivated by Cajun flavors; however, he stated that it is not specifically written on the food truck because he “. . .didn’t want to be titled as just one thing.”

Chance loves to cook all cuisines, and that flexibility can be seen at different events, whether it is a cultural event, such as the Hispanic Heritage Festival, or a normal event with food trucks. This gives variety and sets the food truck apart from others.

While Seasoned & Blessed has a variety of options on its menu, the best seller— was not created by Chance but by Savannah’s recipe: Crawfish Étouffée.

“Anytime she's there, I let her handle the Étouffée, and most of our regulars know that's my wife's recipe,” Chance said.

Now that they had the menu, they needed to set up and sell. The Martins started at Walmart, with virtually almost no customers. However, slowly, one or two customers would come get food, rave, and tell others about it. The Martins found that the next time they set up at Walmart, there was a line, and suddenly, customers and regulars were asking where they would be set up next and loyal customers would travel for their food.

Chance recalls a moment when they were first starting out at Walmart, and he served a Tarleton football player.

“I gave him a lot of free samples, because I was more or less trying to get my name out . . .it wasn’t even probably 15 minutes later, and some of his buddies came up on the phone with him like, ‘okay what am I supposed to order?’”

While Chance and Savannah love to run the food truck and to serve the community, they both still have full-time jobs alongside running the boutique and the food truck.

But cooking is what Chance lives for, whether that be giving free handouts to family members or free samples to customers.

“For me, I really enjoy seeing people try my food and enjoy it. I’ve always said since I started this thing, as long as it tastes for itself, that's all I am after,” Chance said.

“Being able to share my food with other people, that's my happy place.”

If you are a Stephenville community member or not, I highly recommend you try Chance and Savannah’s food truck that has that extra taste of love in it. You can find information on events and locations they will be at on their Facebook page “Seasoned & Blessed.”
